Banana Nut Quick Bread
Makes a 2-pound loaf
Ingredients
- 3 ripe bananas, mashed (about 1 1/2 cups)
- 2 large eggs
- 1/3 cup vegetable oil
- 2/3 cup milk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts or pecans
Instructions
- Add wet ingredients to bread pan
- Add dry ingredients on top
- Select “Quick Bread” or “Cake” setting
- Add nuts at the beep (if your machine has this feature)
- Baking time approximately 1 hour 20 minutes
Pumpkin Spice Quick Bread
Makes a 2-pound loaf
Ingredients
- 1 (15 oz) can pumpkin puree
- 2 large eggs
- 1/4 cup vegetable oil
- 1/4 cup milk
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Add ingredients in order listed
- Select “Quick Bread” or “Cake” setting
- Check consistency during mixing – should be thick but not dry
- Baking time approximately 1 hour 20 minutes
Lemon Poppy Seed Quick Bread
Makes a 1.5-pound loaf
Ingredients
- 2/3 cup milk
- 1/4 cup lemon juice
- 2 large eggs
- 1/3 cup vegetable oil
- 1 tablespoon lemon zest
- 2 cups all-purpose flour
- 3/4 cup sugar
- 2 tablespoons poppy seeds
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Combine all wet ingredients first
- Add dry ingredients
- Select “Quick Bread” or “Cake” setting
