Crusty Country Bread

Makes a 2-pound loaf

Ingredients

  • 1 1/2 cups water (80-90°F)
  • 4 cups bread flour
  • 1 1/2 teaspoons salt
  • 2 teaspoons active dry yeast
  • 1 tablespoon olive oil
  • 1 tablespoon honey

Instructions

  1. Add ingredients in order listed
  2. Select “Dough” cycle
  3. When cycle completes, remove dough and shape into round boule
  4. Place on parchment paper, cover with damp cloth
  5. Let rise 45 minutes
  6. Preheat oven to 425°F with empty metal pan on bottom rack
  7. Score top with sharp knife
  8. Add 1 cup hot water to empty pan for steam
  9. Bake 35-40 minutes until deep golden brown

Rustic Italian with Herbs

Makes a 2-pound loaf

Ingredients

  • 1 1/3 cups water (80-90°F)
  • 2 tablespoons olive oil
  • 4 cups bread flour
  • 2 teaspoons salt
  • 2 teaspoons active dry yeast
  • 1 tablespoon dried Italian herbs
  • 1 teaspoon garlic powder (optional)

Instructions

  1. Add ingredients to pan in order
  2. Use “Dough” cycle
  3. Shape into oval loaf
  4. Rise 40 minutes
  5. Bake at 400°F with steam pan
  6. Brush with olive oil after baking

No-Knead Overnight Rustic

Makes a 1.5-pound loaf

Ingredients

  • 1 1/2 cups cool water
  • 3 1/2 cups bread flour
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon active dry yeast

Instructions

  1. Mix ingredients in bread pan
  2. Select “Dough” cycle but stop after initial mix (about 5 minutes)
  3. Remove pan, cover, refrigerate 12-18 hours
  4. Shape cold dough into round
  5. Let rise 2 hours at room temperature
  6. Bake at 450°F in preheated Dutch oven
  7. 30 minutes covered, 15 minutes uncovered

Multi-Grain Rustic

Makes a 2-pound loaf

Ingredients

  • 1 1/2 cups water (80-90°F)
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • 1/2 cup rye flour
  • 1/4 cup wheat germ
  • 2 teaspoons salt
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup mixed seeds (sunflower, flax, sesame)

Instructions

  1. Add ingredients except seeds in order listed
  2. Select “Whole Wheat” or “Dough” cycle
  3. Add seeds at beep
  4. Shape into oval loaf
  5. Rise 50 minutes
  6. Bake at 400°F with steam

  • Use steam in oven (pan of water)
  • Preheat oven thoroughly
  • Score bread deeply before baking
